Lentil Chili + Corn muffins

A hearty lentil-based chili loaded with fresh veggies and seasoned with Mexican herbs and spices. Zucchini, potatoes, carrots, onions, peppers and tomatoes keep things fresh, while kidney beans and brown lentils pack a protein punch. Toppings include: cilantro, green onions, avocado and lime wedges. Served with corn muffins. GLUTEN: Muffins contain a small amount of gluten.



Ingredients: lentils, kidney beans, broth, cornmeal, wheat flour, veggie, cilantro, hemp seeds, coconut oil, spices, sugar, baking powder, onion, bell pepper, potato, carrot, zucchini, garlic, green onion, lime, jalapeno, applesauce, corn kernels
