Roasted cubes of butternut squash, white beans and pasta in a sage-laced brown butter sauce. Topped with tempeh bacon crumbles, parsley and a cashew-based vegan parmesan. Served with a simple arugula salad garnished with a savory walnut crumble and lemon/olive oil dressing.
