GF Option: Mushroom-Quinoa Soup + Spinach Salad

Classic soup flavored with minced mushrooms, aromatics, sliced carrots, celery and onions. Chunks of roasted mushrooms add texture and depth. Quinoa offers a gluten-free substitute for the usual barley. Spinach salad with sliced red onion, avocado and 'bacon' beans in a whole-grain mustard vinaigrette.
