Mexican Chop-Chop Salad + Corn Cakes + Chipotle Crema

Hearty salad of romaine, red cabbage, bell peppers, zucchini, carrots, cherry tomatoes, green onions, radish and cilantro tossed in a chipotle-lime vinaigrette. Topped with a Mexican-style medley of tempeh and pinto beans. Diced avocado adds depth and creaminess . Served with 'oven-fried' masa cakes loaded with fresh corn, peppers, and onions. Chipotle crema for dipping.
