Mexican Chop-Chop Salad + Corn Cakes + Chipotle Crema

Hearty salad of romaine, red cabbage, bell peppers, zucchini, carrots, cherry tomatoes, green onions, radish and cilantro tossed in a chipotle-lime vinaigrette. Topped with a Mexican-style medley of tempeh and pinto beans. Diced avocado adds depth and creaminess . Served with 'oven-fried' masa cakes loaded with fresh corn, peppers, and onions. Chipotle crema for dipping.


Ingredients: black beans, pinto bean, cilantro, nutritional yeast, tempeh, apple cider vinegar, spices, olive oil, agave, romaine, salt, zucchini, carrot, corn, bell peppers, green onion, tomatoes, avocado, lime, garlic, chipotle pepper, cabbage
