Rainbow Pad Thai

A healthier take on the traditional pad thai. An assortment of colorful vegetables combine with fresh mint, basil, and green onions in a light sauce of tamari, ginger, tamarind paste, and garlic. Tossed with rice noodles, topped with peanuts, and served with salt ‘n pepper tofu.
