Ratatouille + Polenta + Herbed Heirloom Beans

Classic Italian stew with eggplant, bell peppers, carrots, zucchini, yellow squash, sweet onions and garlic in an herby tomato-based sauce. Served over a bed of creamy polenta and topped with fresh-herbed heirloom beans from Rancho Gordo. House-made cashew-milk base included for thinning out the polenta.
