Large flour tortillas stuffed with peppers, onions, mushrooms, corn, spinach, cauliflower, carrots and Mexican seasonings. Topped with a classic tomato-based red enchilada sauce and baked till crispy. Served on a bed of refried pinto beans. Garnishes: avocado crema, garlic cream sauce and chopped cilantro



Ingredients: pinto beans, spinach, cilantro, nutritional yeast, spices, olive oil, apple cider vinegar, agave, tortilla, salt, anaheim peppers, chipotle pepper, lime, bell peppers, onions, mushrooms, corn, cauliflower, carrots, tomatoes, cashews, avocado, jalapeno
